Matt loves Reese's cups. Well, he really loves anything with peanut butter and chocolate. I wanted to make him a cupcake similar to a Reese's cup and I thought why not put the cup in the cupcake. These are peanut butter cupcakes with a Reese's cup center and a chocolate ganache icing. They were absolutely amazing. The chocolate around the cup dissolved into the cupcake and left you with this creamy peanut butter center. Let me know if you want the recipe! Matt said it's his favorite by far!!!

Peanut Butter Reese's Cupcakes

1 box Betty Crocker butter recipe Yellow cake mix
1-1/4 cup water
1/2 cup peanut butter, creamy
1/2 cup butter or margarine, softened
3 eggs

Preheat oven to 325. Beat mix, water, peanut butter and eggs on low for 30 sec, then on med for 2 min. Pour into muffin tins, take a mini Reese's cup and push down into the batter. You don't want to push it all the way in, but make sure that it's covered completely with the batter. Bake about 20-25 min.

Chocolate Ganache Icing

8 oz (240ml) cream
1 tbls butter (optional but makes it stay really shiny even after refrigerating)
1 oz sugar
12 oz (340 g)chocolate (I used semi-sweet chips)

Break chocolate into pieces and put into a heat safe bowl. Heat cream, butter and sugar to boiling. Pour over chocolate and let stand 5 min. Stir from the center out until smooth. Allow to cool to room temp for pouring or spreading, refrigerate for at lest 1 hour before piping.
